It's so hard to find time to nourish yourself when you're a mum, particularly a working mum. In fact, 80% of women we surveyed said their nutrition had taken a backseat since they became a mum. It's often the first thing to go and yet, our health is paramount to our ability to be able to do all the things we are trying so hard to do. Breakfast is an easy one to skip, given how busy we are getting ready for the day ahead. But fuelling our body needn't be complex, time consuming or difficult. Below are a few energy-boosting breakfast ideas. Add some of these to your shopping list to ensure you are well prepped.
Oatmeal with Goji Berries.
Can we prepared the night before.
Ingredients: Cooked oatmeal (1/2 cup when dry) with coconut milk (1 cup) topped with dried goji berries (2 tbsp) and walnuts (2 tbsp).
Avocado toast and eggs.
Easy and filling.
Ingredients: Grain toast (2 slices), avocado (1/2 medium), hard boiled eggs (two medium), salt, pepper.
Yoghurt and Berries.
For when time is crucial.
Ingredients: Full fat greek yoghurt (1 cup), blueberries (1/4 cup), sliced almonds (1 tbsp), ground flax or chia seeds (1 tbsp).
Nut butter toast.
Super easy and quick.
Ingredients: Wholegrain toast (1 slice), nut butter (1 tbsp), sliced apples ( 1 small apple), cinnamon.
Oatmeal Breakfast Muffin.
Can be prepared in advance.
Ingredients: Old fashioned rolled oats, overripe bananas, eggs, honey, milk, real vanilla, baking powder, baking soda, salt, cinnamon. Top with 1 tbsp almond butter.
Scrambled Eggs with Greens.
Easy & nutritious.
Ingredients: Eggs (two whole), goat cheese (1 oz), baby spinach or other greens (1/2 cup).
Chocolate Chia Seed Pudding.
Can be prepared the night before.
Ingredients: Cacao powder, vanilla extract, maple syrup, chia seeds, unsweetened almond or
light coconut milk, cinnamon, sea salt, berries (1/4 cup to top).
Breakfast Energy Bites.
Great for on the go.
Ingredients: Nut butter, old fashioned rolled oats, protein powder, chia seeds, vanilla extract, cashews, slivered almonds, dark chocolate chips (optional).
